Last Week's Fresh Eats Recipe: Pat’s Fresh Apple and Peach Taco Salsa

FRESH EATS ON THE TRAIL - 6/20/2012

Pat’s Fresh Apple and Peach Taco Salsa

Ingredients:

1 medium chopped red onion
2 small cloves garlic, minced
3 large ripe tomatoes, peeled and seeds removed, chopped
1 can of peaches, strained and dried or 2 in season soft ripened peaches
1 granny smith apple diced
½ bunch  minced cilantro
1 to 2 tablespoons lime juice
2 thinly sliced celery stalks
½teaspoons of ginger powder or 1 tablespoon of fresh ginger to taste
1 teaspoon of taco seasoning
salt and pepper to taste

Preparation: Pat’s HINT!!!! FEEL FREE 2 TASTE AS U GO!!!! For a savory kick, saute’ all of the celery with a small portion of your onions and garlic. Leftovers go great over grilled salmon.

Combine taco seasoning, ginger, peaches, granny smith apple, celery onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt, and pepper. Refrigerate for 2 to 4 hours or overnight to blend flavors.

Makes about 2 -3 cups of salsa depending on your veggie sizes.
